Cardoon is a bold, architectural perennial grown for both its edible leaf stalks and its striking violet thistle flowers. A close relative of the globe artichoke, cardoon offers a unique flavor — similar to artichoke when blanched and cooked — and doubles as a dramatic ornamental in the garden. Hardy in Zones 6–9; often grown as an annual in colder climates.

Culinary Uses

The leaf stalks and midribs are blanched before eating to reduce bitterness and improve texture. Use as a side vegetable, in soups and stews, or as a stuffing ingredient. Young, tender leaves can also be eaten raw or lightly cooked. A compound in the leaves, cynarin, supports liver and gallbladder function and may help lower cholesterol.

Ornamental Value

Unpicked plants grow 4–5 feet tall and produce large, violet-blue thistle-like flowers in late summer. The deeply lobed, silver-green leaves are striking in flower arrangements. An excellent structural plant for borders and edible landscapes.

Blanching for Harvest

Tie stalks firmly and wrap with black plastic or newspaper for several weeks before harvest. This removes bitterness and softens the texture. Do not eat raw without blanching.
