Watermelon Radish – Red Meat / Roseheart Daikon (Raphanus sativus)

The Watermelon Radish is one of the most visually dramatic and delightful vegetables in the garden — a Chinese heirloom daikon-type radish with an unassuming greenish-white exterior that opens to reveal a stunning bright reddish-pink interior that truly resembles a slice of watermelon. The flavor is milder and slightly sweeter than most radishes, making it approachable for fresh eating, fermenting, and pickling. Originating near Beijing, China, it has been consumed as both a vegetable and a sweet fruit-like snack for centuries.

A cool-season winter radish — sow in late summer to early fall for fall and winter harvest. Not a spring crop: will bolt to seed if sown in spring.

Growing Instructions

  • Plant about 2 months before first expected fall frost (late summer sowing). Do not sow in spring — will bolt.
  • Sow seeds ½" deep, 1" apart in very rich, deeply worked soil; thin to 4–6" apart.
  • Maintain consistently moist soil; add compost for best root development. Avoid overwatering (causes splitting).
  • Stores well into early spring under proper cool storage conditions.

Culinary Uses

  • Slice thinly raw for salads and garnish — the pink rings are spectacular
  • Ferment or pickle in salt brine or rice vinegar for a vibrant condiment
  • Grate or cube for winter salads
