Korea’s Prized Summer Squash — Better Than Zucchini, Say Its Fans

Early Bulam is a beloved Korean summer squash nicknamed the “avocado squash” for its oval shape and smooth, glossy light-green skin. Its flesh is tender and mild — similar to zucchini but richer and more flavorful, according to loyal growers who refuse to go back. Ripe fruits measure about 4" in diameter and 5–6" in length, weighing around 14 oz. The real wow factor: fruits are ready to harvest in as little as 8 days after flowering, making it one of the fastest-producing summer squashes you can grow. Suitable for greenhouse and open field growing.

Highlights

  • Korean heirloom — “avocado squash” shape with glossy light-green skin
  • Harvest just 8 days after flowering
  • Warm season annual; full maturity in 65–70 days
  • Vigorous vine; suited for greenhouse and open-field growing
  • Superior flavor — richer and more satisfying than standard zucchini
  • Available in treated Thiram seed only

In the Kitchen

Enjoy Early Bulam sliced fresh as a snack, sautéed with garlic and butter, stir-fried with vegetables, grated into Korean-style pancakes (hobak jeon), or folded into zucchini bread. Its mild, sweet flavor works beautifully in both Asian and Western preparations.

Growing Guide

  • Season: Late spring / early summer after last frost
  • Soil: Fertile, well-drained; warm and sunny location
  • Hill planting: Form 1-ft diameter mounds 3–4" tall; space 3–4 ft apart; 1–2 seeds per mound
  • Support: Train to climb a vertical trellis for better air circulation and ease of harvest, or allow to sprawl
  • Watering: Keep soil consistently moist; fertilize as needed
