Planting Instructions

Direct sow as soon as the soil can be worked in spring, or plan a fall sowing for your local climate. Choose loose, well-drained loamy soil with a pH above 6.0. Beets prefer cool growing conditions.

  • Sowing depth: 1/2 inch.
  • Seed spacing: Approximately 1 inch.
  • Row spacing: 12–18 inches.
  • After thinning: Leave 2–3 inches between plants.
  • Germination: Typically 5–10 days under suitable conditions.
  • Preferred germination temperature: 55–75°F.

Growing and Care

Keep the seedbed evenly moist while seedlings establish. Thin crowded seedlings so the remaining roots have room to develop. Maintain consistent moisture during growth and remove weeds carefully to avoid disturbing developing roots.

Harvest and Kitchen Use

Harvest baby beets early or let roots reach your desired size. The previous growing information lists approximately 45 days to maturity; actual timing varies with weather, planting season, and harvest size. Use roots roasted, cooked for salads, or pickled, and enjoy tender young greens cooked or in salads.

Seasonal Planning

Although beets are usually grown for a single-season harvest, they are botanically biennial and normally produce seed in their second year. Plan sowing dates around cool weather for the best growing conditions.
