Starting seeds
Start indoors approximately 6–8 weeks before your expected transplanting date. Use a seed-starting mix and maintain warm conditions, approximately 75–80°F, until emergence. Keep the mix evenly moist without waterlogging and provide seedlings with good light.
Transplanting and care
Harden off seedlings gradually before planting outdoors. Wait until frost danger has passed and soil is consistently warm, at least 60°F. Choose a sunny location with fertile, well-drained soil. Water consistently and feed with a balanced fertilizer as directed; excessive nitrogen can encourage leafy growth at the expense of fruit. If growing in a container, choose a roomy pot with drainage holes and monitor moisture regularly.
Harvest and kitchen uses
Harvest while the skin is glossy and the fruit feels firm, before it becomes overmature. Cut the stem with pruners rather than pulling fruit from the plant. Cook harvested eggplants in grilled slices, roasted vegetable dishes, pasta sauces, or baked preparations. Do not eat the supplied planting seeds.
