Starting your seeds

Start indoors approximately 10–12 weeks before your last expected frost. Sow 1/4 inch deep in a well-draining seed-starting mix. Keep the mix consistently moist but not waterlogged. Maintain warm soil, approximately 80–85°F, with gentle bottom heat if needed. Germination may take approximately 1–4 weeks.

Transplanting and care

Gradually harden off seedlings over 7–14 days. Transplant after frost risk has passed and soil and nights are reliably warm. Choose full sun and fertile, well-draining soil. Water consistently, adjusting for rainfall and temperature, and mulch around established plants to help retain moisture.

For container growing, use a roomy pot with drainage holes; a 5-gallon container is a practical choice. Feed according to the directions on a suitable vegetable fertilizer. Protect plants from cold weather rather than expecting year-round outdoor production in every climate.

Harvest and use

Allow pods to develop their mature color before harvesting. Cut stems with garden scissors rather than pulling fruit from the plant. Use small amounts at first in fresh salsa or hot sauce, or dry ripe pods for homemade seasoning.
