Amaranth seeds "Red Beauty" produce tender oval leaves with a purple-red color and a bright green margin, perfect for microgreens, salads, and garnishes. They can tolerate hot, dry, and moist conditions but do not thrive in colder temperatures. Great for adding color to your vegetable garden!
In India, Taiwan and Japan, the lighter varieties are more popular. In Western cuisine, Amaranth can be substituted in any recipe for spinach. Young leaves are tasty and beautiful in salads.

Amaranth "Red Beauty" Asian Vegetables have high yields of tender, purple-red oval leaves with a bright green margin. Versatile for microgreens, salads, and garnishes. Thrives in hot, dry, and moist conditions, though not in cold temperatures.
Highly nutritious Amaranth leaves and stems can be stir-fried or steamed. They provide protein, iron, calcium, and vitamins A and C. Popular in Chinese cuisine, red-leaf varieties are often included in soups or served separately.

Soil and Water: Amaranth likes loam and silty loam soil. It is very drought tolerant so water only when dry.

Planting and Growing: Direct seed after soil has begun to warm in spring. The seed is very fine so you can mix it with a carrier like sand or coffee grounds. Scatter the seed and rake it in lightly.

Harvesting and Storage: For greens, harvest before flowers appear. You can harvest the entire plant. For seeds harvest after flowers have turned to seed, by cutting the stalk and letting it cure for a few days in a sunny location. Bring it in at night to avoid moisture. Once dried, shake into a paper bag and filter with a sieve.

Good seeds. Germinated in 1 week.10 days delivery. Not bad

I ordered Amaranth and Cuban Oregano. There was a slight delay in delivery,had to call the company,they did receive the call and the seeds were delivered a few days later.However with the covid-19 going on,the delay is not unexpected,they may be short-staffed. The Amaranth seeds germinated in 1 week,still waiting on cuban oregano.
