The Black Root Salsify SEEDS, also known as Scorzonera hispanica, are an heirloom variety that is non-GMO. These unique seeds can be grown as a perennial in zones 6 to 9 or as an annual. Originally a staple in European cuisine since the 17th century, this lesser known root vegetable is now gaining popularity in the United States.

Growing Information : Salsify is an ideal cool-season crop that should be directly sown either in early spring or early fall. It is not recommended to transplant salsify as it is a root vegetable and does not thrive when moved. Plant 3-4 seeds ½' deep and 4-6' apart in organic, well-tilled, and well-drained soil in full sun.
It is important to note that salsify seeds have a slower germination period of 14-28 days and an even slower maturity of 100-130 days. The soil must be well-tilled to a depth of 12' to allow the carrot-like root to grow unobstructed.
