The Dragon's Claw Pepper, also known as Capsicum annuum or Heirloom Chili Pepper, is an open-pollinated plant that reaches maturity in just 75 days. Its fruits are 8 ½" long and 1" wide Cayenne peppers, with a medium thin flesh and a dark red color when ripe. This pepper variety is highly sought-after for its spicy flavor, which scores a Scoville Heat Unit rating of 75,000. Its unique curled shape, resembling a claw, adds to its appeal and makes it perfect for drying, roasting, making salsa or hot sauce, and creating chile powder. Originally from the USA, this pepper plant features green stems, leaves, and white flowers, making it a striking addition to any garden.

When to sow outside:
2 to 4 weeks after average last frost when air temperature is at least 70° F and soil temperature is at least 65° F.
Harvesting: Harvest when peppers have turned from green to red. When harvesting, take care to avoid touching the interior of any broken peppers, as the capsaicin is an extreme irritant, especially to the eyes. Wash hands thoroughly after harvesting, or wear gloves to harvest peppers.
