European Soldier Bean, known as Red Eye beans Heirloom European Soldier Bean: These Heirloom beans resemble a tiny, toy 18th century soldier due to their long white body with reddish “eye” markings earning them their name, European Soldier bean. Known as a baking bean, they are also known as Red Eye beans and can replace almost any bean from the white bean family in recipes. Soldier beans are about 3/4 inch long with a mild flavor and firm texture. In France, this bean is known as 'Haricot St-Esprit à Oeil Rouge' or 'Holy Spirit in Red Eye' bean.Sow seeds outdoors after danger of frost has passed and soil and air temperatures have warmed. Dry Bean Seeds - 'Soldier'Vegetable Description: Soldier beans, also called red-eye beans, come from New England, where Americans have been growing them since the 1800s. Their name is derived from a distinctive red marking around the "eye" of the bean that looks somewhat like a toy soldier.
