Grow abundant, delicious artichokes in any location, including northern gardens. This variety boasts consistent plant size, fewer spines, and increased production, an update to the original 1863 heirloom 'Green Globe'. Ensure adequate space and nutrient-rich soil for a yield of 3 to 5 flavorful artichokes. A perennial in USDA zones 7-10, or can be grown as an annual in colder regions.

Sowing: Artichoke seeds should be stratified by placing them in damp sand in the refrigerator for 2 weeks. To germinate them, start indoors 8-12 weeks before the last frost. When planting, ensure seeds are 1/4" deep in 4" pots and maintain a temperature of 60-70 degrees for the seedlings. Once they have developed several leaves, expose them to lower temperatures below 50 degrees F for 12-20 days. This process, known as vernalization, simulates a "winter" environment which promotes growth.Transplant the seedlings outside two weeks after the last spring frost. Space them 48" apart in rows 64" apart. Direct sowing the seeds outside after last frost also is an option, though it takes the plants longer to mature. Artichokes can also be fall planted, especially in warmer climates, since artichokes thrive in cool weather.

How to Grow  

Artichoke plants are known for their high tolerance to weeds and can thrive in a variety of soil types due to their close relation to the stubborn cardoon. While they prefer cooler climates, they can still grow well in warmer conditions if provided with some shade. For optimal growth, start artichoke seeds indoors 3-4 weeks before the final spring frost or directly sow them outside after the frost has passed.

Sow 2-3 artichoke seeds 1/4 inch deep per cell or peat pot, 48 inches apart in a sandy, Organically composted, and well-drained bed with soil pH of 6.5-7.0. Seeds germinate in about 10-21 days, requiring consistent water and sunlight. Plants will need adequate garden space, as they can grow up to 48 inches tall and 72 inches wide. Add top layer of mulch to cool soil and roots in warmer climates. Artichoke is a heavy feeder and benefits from routine fertilizing.

Harvesting 

Regardless of color or variety, artichoke is ready to harvest when the buds" bracts (outer protective leaves) begin to slightly open. Some varieties will mature a consistent green color while some varieties mature when a deep purple. Artichoke stems are thick and can only be harvested with pruning shears or a knife. Unharvested artichoke buds will bloom into a stunning 3-5" wide violet head, though no longer being edible. Lower buds on the stalk will not mature to be as large as the top buds and can be harvested when about 3" in diameter.
