White turmeric, also known as zedoary, is a rare spice native to India and Indonesia. It was introduced to Europe in the sixth century and was popular during the middle ages. This rhizome has a thin brown skin and a bright orange, hard interior with a similar smell to turmeric and mango. It is often referred to as "amb halad" in many Indian languages.
Curcuma zedoaria, commonly known as zedoary or white turmeric, is a perennial herb in the ginger family Zingiberaceae. Native to South Asia and Southeast Asia, it is known for its aromatic rhizomes which are used in traditional medicine and as a spice. The plant undergoes a dormancy period during the cooler months.
White turmeric, or zedoary, grows in tropical and subtropical wet forest regions. It is a rhizome, or underground stem, like turmeric and ginger. The rhizome is large and tuberous with many branches. The leaf shoots are long and fragrant, reaching 1m (3ft) in height. The plant bears yellow flowers with red and green bracts. Pieces of the rhizome are planted, taking two years to mature before it can be harvested.
