Yellow Sweet Spanish and White Sweet Spanish are two cultivars of long-day onions (Allium cepa) grown for their sweet and mild flavor. According to the Old Farmer's Almanac, long-day onions such as Yellow Sweet Spanish grow best at more northerly latitudes above the 36th parallel because they need the long hours of daylight common to northern climates. Sweet Spanish onions require very similar care to other types of onions, but they are very heavy feeders that need good, rich soil and light feeding during the growing season to produce a bumper crop of their sweet, mild-tasting onions.
Cultivation: Prepare fertile, well-drained soil. Sow seeds in fall and transplant seedlings in January. Keep soil moist and well weeded. Fertilize as needed. Harvest when skins develop and tops have fallen over. Allow the onions to dry in the open air for at least a week. Cut off tops and roots. Air dry 2-3 more days. This will help to seal the onion and avoid spoiling. Onions can be harvested at any stage before full maturity
Growing Instructions
Growing onions is simple: If you can poke a hole into the ground, you can grow an onion from a little plant.
Plan to put your onion plants in the ground as soon as the soil can be worked, and immediately after your last expected frost date. The cool temperatures, and the fact that the soil is still moist, is actually beneficial to the development of onion bulbs.
Prepare the garden row for your onion plants by digging it to a depth of 4 inches. Each plant will start growing within days after you plant.
