This early-maturing Japanese variety produces a prolific quantity of pods, each containing 3 to 4 plump beans with white pubescence and exceptional sweet, buttery flavor. Unlike field soybeans, White Lion was bred for fresh eating: tender, nutritious, and delicious hot or cold. Most pods mature at the same time, making harvest clean and efficient. Compact bush plants need no staking and are attractive enough to double as an ornamental.

In the Kitchen
Boil fresh edamame pods in salted water for 5–6 minutes and enjoy warm as a snack, or cool for salads, grain bowls, and sushi. Shell and toss into stir-fries or fried rice. White Lion’s rich, sweet flavor is exceptional even for those who don’t typically enjoy tofu or soy products. Allow pods to dry fully on the plant for dried soybeans to use in cooking.

- Direct sow outside after last frost danger has passed
