About the Trinidad Pimento Pepper

The Trinidad Pimento ripens from light green to deep red or orange-red, growing over 3 inches long with a slender, fragrant profile. It has the appearance and aroma of a hot pepper but none of the capsaicin heat — making it uniquely versatile. It is irreplaceable in green seasoning, stews, soups, rice dishes, and marinades across Trinidad, Tobago, and throughout the Caribbean diaspora.

Family Recipe: Trinidad Green Seasoning

The foundation of Caribbean flavor — use it as a marinade, seasoning base, or all-purpose sauce. Makes enough to last weeks in the fridge.

Ingredients:

  • 1 bundle cilantro
  • 1 stalk celery
  • 6 cloves garlic
  • 2 green onions
  • ½ bunch thyme
  • 5 Trinidad Pimento peppers
  • 1 inch fresh ginger
  • ¼ cup water
  • ¼ cup white vinegar

Directions: Blend all ingredients until smooth. Use immediately as a marinade or seasoning base, or refrigerate for up to 2 weeks. Freeze in ice cube trays for easy portioning.
