Why Tendergreen Improved?
The “Improved” designation on Tendergreen marks a selection specifically enhanced for disease resistance (particularly mosaic virus tolerance) and pod uniformity over the original Tendergreen. The completely stringless, round pods are ready from 4 to 8 inches and maintain tenderness longer than many varieties — meaning a slightly delayed harvest won’t result in tough, fibrous pods. This forgiving quality makes Tendergreen Improved especially valuable for gardeners who can’t check daily. The pods are perfectly straight, making them the ideal canning and pickling bean — they pack cleanly into mason jars without bending or breaking.
Culinary Uses
- Pickled dilly beans (best use): Tendergreen’s straight, stringless pods are the premier pickling bush bean — pack whole pods vertically into mason jars with dill, garlic, red pepper flakes, mustard seed, and white wine vinegar brine; process in a water bath canner or refrigerate for a week before eating. The straight pod shape allows maximum jar density and an even, professional-looking pack.
- Fresh steamed or boiled — dressed simply with butter, fleur de sel, and lemon; or blanched and finished in a hot pan with garlic and olive oil
- Stir-fried — with ginger, garlic, soy sauce, and sesame oil; or with XO sauce and chili for a Cantonese-style side
- Salad niçoise — blanched and cooled Tendergreen beans as the classic green element alongside tuna, olives, anchovies, hard-boiled eggs, and capers
- Three-bean salad — marinated in red wine vinegar, olive oil, sugar, and red onion alongside kidney beans and chickpeas
- Green bean almondine — blanched beans sautéed in brown butter with toasted sliced almonds; a classic French bistro preparation
- Green bean casserole — with cream of mushroom sauce and crispy fried onions; Tendergreen’s firm texture holds up well to baking
- Canned green beans — home-canned in a pressure canner for long-term pantry storage; Tendergreen’s consistent pod size and stringless character make it ideal for uniform canning
- Frozen — blanch in boiling water for 3 minutes, cool in ice water, drain, and freeze flat on a baking sheet before bagging; stores for up to 12 months
Planting Guide
- Direct sow (strongly recommended): Beans dislike root disturbance — direct sow outdoors 1 week after the last frost date when soil temperature is above 60°F.
- Inoculant (recommended): Treating seeds with a legume inoculant (Rhizobium bacteria) before planting improves nitrogen fixation in the root zone, boosting yield and reducing the need for nitrogen fertilizer — especially beneficial in garden beds where beans have not been grown before.
- Depth and spacing: Plant seeds 1 inch deep and 2–3 inches apart in rows spaced 18–24 inches apart. Thin to 4–6 inches apart after germination.
- Succession sowing: Sow every 2–3 weeks from after last frost through midsummer for a continuous harvest window rather than a single large flush.
- Watering: Keep soil consistently moist — beans have shallow roots and are sensitive to drought during pod development. Water deeply at the base at least once a week in dry weather; avoid overhead watering (wet foliage promotes disease). Mulch around plants to retain moisture and suppress weeds.
- Fertilizing: Beans fix their own nitrogen. A light application of balanced fertilizer or compost at planting is sufficient — excess nitrogen produces lush foliage at the expense of pod production.
- Companion planting: Plant with carrots, cucumbers, and corn. Keep away from onions and garlic, which inhibit bean growth.
Harvesting
- Begin harvesting when pods are 4–8 inches long and no thicker than a pencil — the peak window for flavor, tenderness, and snap. Do not wait for pods to bulge with mature seeds.
- Harvest daily or every other day at peak season — consistent picking dramatically increases total plant production by signaling the plant to set more flowers.
- For best flavor, serve or preserve beans on the same day as harvest. Fresh beans deteriorate quickly — store unwashed in a plastic bag in the refrigerator for up to 4 days if needed.
- For canning and pickling, harvest at uniform length (5–6 inches) for a consistent pack.
