The lentil plant grows 30 - 40 cm tall, bushy and semi-viny annual. It has many soft, hairy branches with pinnately compound leaves and numerous oval leaflets. Flowers are white, lilac, or pale blue. The seeds grow in pods about 1 cm long, each pod bears two seeds in each. 

 Uses: Lentils are very nutritious and can be cooked on their own or added to soups, stews and made into a curry (dhal).  Lentils are more digestible than many legumes. The dried seed can also be ground into a powder and used with cereal flours in making bread, this greatly enhances the value of the protein in the bread.

The seed stores better if it is left in its husk. Young seedpods can also be used fresh or cooked like green beans. Lentils work wonderfully in just about any kind of savory dish you want to be creative with. They can be tossed into both green salads and grain salads or used in sandwich wraps. Lentils are delicious added to soups, stews, dals, curries and chili, and they are fantastic as a meat substitute for veggie burgers and vegan sloppy joes. They are also quite tasty cooked by themselves and served over rice or mixed with vegetables. 

Sprouting

 Soak 2 tablespoons of seeds for 8-12 hours.  Rinse and drain twice a day.  Once in the morning and once at night.  They are ready to harvest in 5-6 days.

GROWING NOTES
All beans and peas are legumes and benefit from "inoculating" with rhizobacteria. These bacteria do the work of taking gaseous nitrogen from the air and "fixing" or concentrating it in pink root nodules which then slough off, adding nitrogen to the soil in a form other plants can take up as a nutrient. Inoculating your beans and peas will increase germination, and the health of your plants, helping them growing large roots and thus healthier plants. Growing pole beans with corn provides an extra shot of nitrogen to the corn, a wonderful natural symbiotic relationship that the Native Americans understood very well. You will see a big difference in overall results. Healthy legumes should also be turned under the soil when production ends as they are excellent green manure for your next crops
