Hidabeni – Japanese Red Turnip (Brassica rapa)

Hidabeni is a celebrated heirloom Japanese turnip from Gifu Prefecture — a designated dento yasai (traditional vegetable) prized for its striking deep red skin, flat semi-globe shape, and mild, beautifully textured white flesh. Growing to approximately 10 cm in diameter and 5 cm in height, Hidabeni is compact, refined, and versatile — ready to harvest in just 45–50 days from spring through fall. Cool temperatures enhance both the color and flavor, making this a standout cool-season crop.

The roots and young green tops are equally edible and delicious — raw with dressing, pickled, stir-fried, or added to soups, curries, and stews. Successive plantings every 2 weeks provide a continuous harvest throughout the season.

Growing Instructions

  • Sow seeds in spring or late summer/early fall in fertile, well-drained, sunny soil.
  • Direct sow ½" deep; thin to 4–6" apart for proper root development.
  • Sow every 2 weeks for a continuous harvest throughout the season.
  • Keep soil consistently moist. Cool temperatures improve color and flavor.
  • Harvest when roots reach approximately 4" in diameter.

Culinary Uses

  • Slice raw and serve with a light dressing for a delicate salad
  • Pickle in salt or rice vinegar for a vibrant, crunchy condiment
