Fresh Ube, a True Purple Yam
Fresh Ube is an edible Dioscorea alata yam known for its naturally purple to lavender flesh and gently sweet, earthy flavor. Also called Filipino purple yam, water yam, or ratalu, it is a true yam and is different from purple sweet potatoes.
Ways to Cook Ube
- Boil or steam until fully tender, then mash or purée

Preparation and Storage
Remove the tough outer skin and cook thoroughly before eating. Ube color naturally varies from pale lavender to deep purple, and individual roots vary in size and shape.
