These beans originated in Africa but are now being grown here in the US. They have been renamed Provence Beans after the lavender fields of southern France. They are great in soups and side dishes because of their beautiful purple color. Experiment with them in casseroles, soups and salads, Provence beans mild flavor and slightly firm texture combine well with aromatic herbs.
